<b>Vancouver </b>– I loved the city before I even visited because… VIEWS. I am 100% a city gal, but I loved the idea of being downtown while also being able to see mountains & have access to nature. This Pacific Northwest city is known to be Canada’s culinary and cultural capital (although, I may put Toronto above that haha). Being surrounded by nature’s natural beauty definitely helps too!</div>

With the downtown city livin’, as well as access to the most beautiful mountains, Vancouver is an extremely coveted city to visit. The one thing I was a little nervous about was about Vancouver’s nickname: ‘<i>Raincover</i>’ – haha, since it apparently rains a lot. Fortunately for me, I was able to experience a rain-free vacation during my time in Vancouver (phew), so that obviously meant I had to spend it all outside!</div>

When I think of Italian cuisine, my mind automatically runs to pasta and charcuterie (specifically prosciutto). If you’re the same as me, you’re in for a real treat. Today, I’m sharing two simple recipes that will blow your dinner party guests away. You’ll start them of with a bouquet of the best types of roses – <i>prosciutto roses</i>, might I add – and end off with a classic <i>cacio e pepe</i>. All of this with a glass of wine? I’m sold! First things first, let’s talk ingredients. Here I’m using only the best – <a href="https://parmacrown.com/" target="_blank">Prosciutto di Parma</a> and <a href="https://www.prosciuttosandaniele.it/en/" target="_blank">Prosciutto di San Daniele</a>. Both of these ingredients have a <i>PDO</i> status, which is a European Union certification that stands for Protected Designation of Origin. It’s “designed to protect the names and traditions of high-quality European foods that are made according to traditional methods in a specific geographic region”. AKA… It’s basically a stamp of approval that you’re getting the best!</div>

In order to know what makes <b>Prosciutto di Parma</b> stand out, we’ll have to go back to its history and region. This prosciutto specifically can only be produced from the hind legs of specially selected pigs that are raised in 11 regions of Italy. They’re of only the ‘highest standards’ and are monitored, inspected, and traced. The only producers of Prosciutto di Parma are in Parma (hence the name, obvs) and they pride themselves of having no additives or preservatives – just sea salt, air and time. Similarly, <b>Prosciutto di San Daniele</b> is also completely natural and is actually matured for at least 13 months exclusively in the San Daniele del Friuli area in Northern Italy.</div>

Honestly, it is that simple. You take the prosciutto, fold it in half, twist it, roll it, and ta da! You can also roll it the traditional way, but what’s the fun in that?</div>

In order to keep it’s shape, place a little dollop of cream cheese on a cracker and place your delicate prosciutto rose on top. Cacio e pepe is literally stands for ‘cheese and pepper’, and the ingredients are just as simple as that. All you need is peppercorn, cheese, butter, and a pasta. I personally prefer the bucatini – it’s basically a spaghetti with a hole through the center, which is perfect for sopping up more sauce. But let’s talk about the best cheese for this dish.</div>

Typically, people use parmesan in cacio e pepe; but, I prefer Grana Padano. It makes the sauce more creamy and has a particular nutty flavour to it. Again, <b>Grana Padano</b> holds the PDO certification and is well-recognized in Italy. To break it down, ‘<i>grana</i>’ actually means grainy texture and ‘<i>padano</i>’ is the area in northern Italy it’s produced. Grana Padano is generally aged from 9 to over 24 months, where it gets more grainy and rich in flavour as it’s aged longer. It is also naturally lactose-free!</div>

Start by boiling your water for your pasta. The key here is to heavily salt your pasta, as you’ll be using some of the starchy, salty pasta water to create your sauce. Once it starts boiling, throw your pasta in.</div>

While your pasta is cooking, crush your peppercorns and melt butter on your pan. Add in your crushed pepper to the melted butter, and watch it bubble. </div>

Once your pasta is almost half-way ready, take a scoop of your starchy pasta water and pour it into your pan. It should bubble up immediately. Mix everything and it should thicken your butter and pepper concoction a little bit. You can then add in your pasta to the pan. The KEY is to take the pasta directly from the pot to the pan. You want the pasta water – so do not strain the pasta, remember that!</div>

Immediately incorporate the Grana Padano into your ‘butter/pepper/starch water’ sauce, and you’ll see it start to thicken up right away. The sauce will start looking creamy and silky as you continue mixing.</div>

I've heard a lot of amazing things about the scenery (and it was truly stunning), but not too much about the food. My ultimate fave food of all time... Italian. Small spots with handmade pasta and a limited menu is something I dieeee for. I mean, I still love places on the other end of the spectrum like Olive Garden but please visit <a href="https://www.askforluigi.com/" target="_blank">Ask for Luigi</a>. They have about 4-5 dishes on their ever-rotating menu, with 1 to 2 specials each day. From 20 minutes before opening, they always have a line up out the door. We arrived 10 minutes before it opened and was lucky to be included in the first seating. I got my hands on the pappardelle of my dreeeams. I mean, <a href="https://www.instagram.com/p/B1w5vrdBrZA/" target="_blank">watch it in action</a>!<br>

As a huge pasta lover, this combination has constantly been one of my favourites. I think it's about time I make it at home, instead of spending all my money ordering it out at restaurants! The ingredients are pretty simple here: orecchiette, sausage, broccoli (usually broccolini is used, but I couldn't find it in my grocery store), & some other basics.<br />
<br />
Let's get to it, shall we?!<br />
<br />
<b><span style="font-size: large;">1 - Prep your ingredients </span></b><br />
Cut your garlic, wash your broccoli (or broccolini, if you want to go the traditional route), and take the sausage meat out of the casing. Boil your water for the pasta and broccoli. Heat your pan on medium-high and warm up some oil.<br />
<br />
<b><span style="font-size: large;">2 - Cook it up!</span></b><br />
<u>Pots</u>: Once the water has boiled, place your pasta and broccoli in their respective pots. You only want to blanch the broccoli, as you're going to finish it off in the pan later on. Follow instructions for cooking your pasta and cook it to your liking :)<br />
<u>Pan</u>: Once the oil is heated, add in your garlic. Let that cook for about 30 seconds, and then add in your sausage pieces! Make sure it's broken up. Add in some chili flakes and take in all the aromas.<br />

After your sausage is 95% cooked, add in the blanched broccoli, some chili flakes, garlic, and a slab of butter. Mix it all up, and then add in the drained pasta. Add as much parmesan as you'd like, and serve it up!!<br />

Australia has been on my bucketlist since <i>forever</i>, but it always seemed out of reach because it is literally so far. When we saw that there was a flight deal for half the normal airfare cost, we jumped on that opportunity immediately! As I am sure you have heard, the <i>cost of visiting/living in Australia is <b>high</b></i>, as Australia is one of the most expensive countries in the world. Of course, people's expectations of how 'much' things cost is relative to the individual, but I thought it would be interesting to total up how much money was spent on my two week trip to Australia. I knew this trip was going to be expensive to begin with, but as an accountant, I would have loved to see an estimated figure haha. So here is that! You can see penguins in Australia! Did you know that?! I didn't until after I started planning my trip to Melbourne, Australia. The penguins that are native to Australia are called the <b>Little Penguins</b>. They can only be found in southern Australia or New Zealand. And yes, as their name gives it away, they are the smallest penguins in allllll the land and it is so easy to see them if you are visiting Melbourne! All you need is a sunset, a warm sweater, and patience (if you go in April like I did). I hope I'm able to convince you from this post that you MUST go see these Little Penguins when you go to Melbourne!<br>

Being on an airplane is so much fun! The food is delicious, and I can’t believe we get unlimited water and coffee. Jokes aside, flying has always been very exciting for me – I’ve never been one to be scared or dread the travel portion of going on vacation. And I’ve done my fair share of flying, especially long haul flights to Europe and Asia (6 to 15 hours!). Two years ago, I ‘up-ed’ that and flew to Dubai. As I transitioned into the keto diet a couple months ago, the one thing that I found hard was making a high fat meal that didn't include a fat bomb or excessive amounts of heavy cream or cheese. I got this recipe idea from always going to a local restaurant and ordering this exact meal. The ingredients were so simple. Why couldn't I just make it at home?! So, here I am :)</div>

Place your spinach into a bowl. As you're going to be eating it raw, it's always a good idea to get organic spinach!</div>

<li>Wash and cut your zucchini into thick slices, and then again into quarters.</li>
<li>Pat down your salmon with paper towel, to get all the excess moisture off. Season the fillet liberally with any spice that you prefer. I chose salt, pepper, paprika, onion powder, and garlic powder.</li>

<b><u><span style="font-size: large;">Cooking - 10 minutes</span></u></b></div>
<ol style="text-align: left;">
<li>Heat your pan on a medium-high heat, and put in your tbsp of butter.</li>
<li>Once it starts to bubble up a little & is hot enough, place your salmon in <b>skin-side down</b>. This is very important, as it'll help crisp up your salmon skin and make it a lot easier to flip. It also makes the salmon skin super yummy and crispy.</li>
<li>Leave the salmon there for 2-3 minutes, depending on the thickness of your fillet. Once you see the sides of it turning white and moving up to the half-way point of your fillet, leave it for 1 more minute and then carefully flip.</li>
<li>Once you flip your salmon, be sure to press down on all sides to make sure it touches the pan.</li>
<li>Add your zucchinis to the other side of the pan. Season it with whatever you want! I used salt & pepper only.</li>
<li>Leave the salmon and zucchini on the pan for another 3 minutes. TIP: Don't move the food around in the pan, as that actually cools down the food and it'll take longer to cook / won't be as crispy on the outside.</li>

Pensacola is located in the Northwestern part of the Florida state and sits on the Florida Panhandle. It is also about a 3-hour drive away from New Orleans, which I found to mean that the Southern hospitality is everywhere in this city! The first Naval Air Station is also located in Pensacola and it is also the base of the Blue Angels flight demonstration team! I have been told that it is a huge event whenever they do demonstrations and people line up on the beach just to watch it. If you get a chance, you need to <i>go sailing on a trimaran </i>with <a href="https://www.condorsailingadventures.com/" target="_blank">Condor Sailing</a><i>.</i> There are only 21 made in the world, and only 1 open to the public. The other 20 are still used for racing around the world! There is no leaning side-to-side, so therefore no seasickness!! Also, Captain Kirk is awesome. I actually got a couple DM's on Instagram from locals in Pensacola reiterating the same thing, so you know it's got to be legit ;)</div>

If being on the water isn't your thing, you will absolutely love the beach. The sand is the purest white you'll ever see - it literally looks like a land of white sugar! It's the most amazing thing to walk around in, and it even squeaks as you walk on it because the sand is composed of almost 100% quartz!!! I highly recommend setting your alarm before the sun rises, so you can go to the beach to watch the sky turn into the pinkest cotton candy-like sky as the sun was rising. It was honestly the most beautiful thing I've ever seen!</div>

Other activities I'd recommend checking out is the National Naval Aviation Museum and Fort Pickens, if you're into the historical sights! You can also visit one of the State Parks in the area and explore. We decided to visit the Big Lagoon State Park during our visit and spent some time canoeing! It was actually so peaceful to float around in the area (even though it was like an arm workout haha). After that, take a drive through the beach houses as they're all so stunning!! It was really fun to walk around and just explore different neighborhoods and see the different types of houses.</div>

Don't forget about the food here too! As you can expect, the seafood is amazing in this town and it's something you don't want to miss out on. We got our fair share of oysters, fish, and shrimps, to say the least! Pensacola is also home to Restaurant IRON, one of 50 Best Southern Restaurants in America. We also enjoyed a really nice breakfast on our hotel balcony during our stay at the Hilton Pensacola Beach, where we got to enjoy the sunrise and ocean breeze from our rooms.</div>

Guys, can you believe it's mid-November already?! Although people typically mourn over the end of summer/autumn, this is actually one of my favourite times of the year. The gorgeous autumn colours (remember my trip to Muskoka I posted about?!) + the ramp up towards the holidays makes my heart happy. This past weekend, John and I decided to have a one-night stand & take a mini road trip up to Muskoka. We've both never been, or are we honestly 'cottage/camping' people, but with the new 2018 <b>Ford EcoSport</b>, we decided to go on an adventure up north together.</div>

Checking out <b>lavender fields in Provence </b>has always been on my bucketlist, but I didn’t know I’d be going to visit them this year! When planning my road trip through France, it honestly did not even cross my mind to go because I had no idea when lavender season was. When we arrived in France, it came up in a random conversation and I learned that it was actually the PERFECT time to visit. I was so, so happy that we were able to add it to our itinerary on our last day before flying back to Toronto.</div>

Staying in Marseille, we drove an hour up north past Aix-en-Provence towards Valensole to seek out the beautiful fields of purple. Although there are a number of spots to choose from, we decided on <i>finding lavender fields in Valensole </i>(aka the closest one) and it honestly couldn’t have been a better decision!</div>

Even though I would have LOVED to go during sunrise or sunset, we weren’t able to due to the distance it takes for us to get to and from our hotel in Marseille. We ended up going around 5pm (to miss the harsh, afternoon sunlight) and it wasn’t too bad. It wasn’t busy – everyone was able to spread out into a row of lavender and take your own pictures.</div>

I found that it was quite hard to plan because these lavender fields aren’t explicitly listed on Google Maps, like a restaurant would be per se. But I ended up finding one through endlessly searching on other people’s blog posts haha. The field that we went to was called <i><b>Lavandes Angelvin </b>(Latitude: 43.824546 | Longitude: 5.938015)</i>. If you’re looking for an actual place to put into your GPS, this is it. PLUS, this field has lavender and sunflowers. If you're lucky, you'll be able to see both!</div>

<i><b>Here are a list of things you must know when planning to visit the lavender fields in Provence:</b></i></div>

<div style="text-align: justify;">
• Please look online first as to whether the lavender is even blooming! There's no point planning to visit if they aren't even in full bloom. Even if they just started to bloom, you won't get the same 'full' effect.</div>
<div style="text-align: justify;">
• Stay a night in a town nearby. You’ll not only be able to wake up early to go at sunrise, you’ll also be able to stay late until sunset (usually around 9:30 to 10pm).</div>
<div style="text-align: justify;">
• To avoid aimlessly driving around the area, make sure you put in a specific address or coordinates into your GPS. It’ll save you the hassle of aimlessly driving to find the purple fields!</div>
<div style="text-align: justify;">
• If you have any form of allergies (i.e. to Spring, nature, etc.), do NOT forget to take your allergy pills 30 minutes before arriving. There are way too many things in bloom that will irritate your nose.</div>
<div style="text-align: justify;">
• Bee-ware of all the bees!! There are so many swarming everywhere. Even though they will most likely not hurt you because they are too lavender-happy, it is good to note. As long as you keep moving and don't both them, you will bee fine.</div>

7 months ago, I got the opportunity to visit the MasterChef Canada set in Toronto and be a part of the show in the best way I knew how - obviously <i>not </i>cooking haha. I'm leaving that up to the pros. Alongside 30 other blogger and influencers, we had no idea what we were in for until we got there. I was just excited to meet with the MasterChef Canada judges, Michael Bonacini, Alvin Leung, and Claudio Aprile.</div>

Once we arrived, we were quickly briefed that we would be in the Top 3 Home Cooks episode of MasterChef Canada and that we were going to be tasting their dishes and critiquing one of them. I was beyond excited. I've always wondered how they film cooking shows. When do they do commentary of the process and their dishes? Do the cooks actually get the correct allotted time as we see it on TV? Is it as stressful as they make it seem? I couldn't wait to find out for myself.<br />

We watched a little from the backstage, which was basically a wall of a million cameras (so cool). And then, we got to walk through the MasterChef pantry in order to get onto the main set. When we were walking through, all of us could barely keep quiet from the excitement. We took a couple pictures, hence the picture of me behind the MasterChef Canada table/sign with a huge, fat grin on.<br />

Once we walked on set and were being filmed, it goes a bit blurry haha. I low key blacked out a bit because I was so overwhelmed by how cool it was and also starstruck from the three judges. Because I sat right in front of the stage, I got to hear and watch the judges closely. I got to hear Chef Michael Bonacini and Chef Claudio Aprile chat about the home cooks on the stage (that's when they do their commentary!) and I remember them repeating certain phrases just to get their comments with the correct emphasis haha. Loved seeing that! And yes, we also got to witness Chef Alvin Leung yell "1 MORE MINUTE!!" haha. It was honestly such a crazy experience already.<br />

The Top 3 home cooks did an amazing job under pressure, and it was so fun to watch them in action. Yes, they do work really quick and I swear they run up and down their stations at least 20 times in the last couple minutes! Congratulations to the top 3 for making it this far - Andy Hay from Nova Scotia, Michael Griffiths from Richmond Hill, and Beccy Stables from Alberta.<br />

And then, it was our turn. The theme of the Season 5 Episode Episode 11 "Pop-Up Star" was that the top 3 home cooks would be opening their own 'pop-up restaurant' on set, with 10 influencers at each pop-up restaurant. We were served our dishes and we got working right away. We took our photos, and then it came time to taste the food. Chef Alvin Leung came to our table to ask us about what we thought about the food. If I am being honest, I don't even remember what I said! I seemed to have forgotten how to speak English LOL oops. Either way, before I knew it, we all finished eating our dishes and we were ushered to walk back out while the judges deliberated.<br />

And <i><span style="font-family: "times" , "times new roman" , serif; font-size: large;">that's a wrap</span></i>! From being backstage, to walking through the MasterChef pantry, to meeting the 3 incredible judges, to watching these talented home cooks show off their skillz, & to just see how the whole production comes to life... To just say this was an amazing experience would be an understatement. A huge thanks to MasterChef Canada, Proper Television, and CTV for this opportunity. I'll never forget it!<br />
