Located in the Shangri-La in the financial district, one of my favourite spots in the city for food is Bosk. I've dined here multiple times, and have never had a bad meal. It doesn't help that they always find ways to fly in chefs from around the world, that work in other Shangri-La hotels, to come to Toronto and cook us up some of their delicacies. This dining experience with guest chef Andrea Ferreo from Shangri-La Tokyo was no exception.
Although working in Tokyo, Chef Ferrero's cooking style "reflects his desire to serve contemporary Italian cuisine focusing on the natural simplicity of his chosen ingredients offered by the season." Luckily enough, I got a chance to taste the following items from his limited edition menu at Bosk earlier this May:
- Raw Sea Scallops | Horseradish, Mint, Lemon, Parsnip Puree, Wild Sorrel
- Green Asparagus Chilled Soup | Cheese Croutons, Truffle Caviar, Chives, Cream, Lime
- Seared Tuna Belly | White Asparagus poached in Mountain Milk, Salsify Baked Over Salt Girolles Mushrooms, Grilled Loquats
- Wild Venison | Potato Cake, Artichoke Puree, Grilled Artichokes, Red Wine Jus
- Beef Agnolotti | Grated Parmesan, Fermented Butter
